Start with a boiling pot of water or the meat stock. Put in your sofrito, then the meat, love ko baboy, beef. Can be parboiled already. Add vegetables, tamarind powder or paste. Season.

It's a different way, a bit. No browning or searing of protein. Sofrito is cooked separately the put in the water pot with the meat then veggies
